Ingredients:

Barbecue Rub for Ribs:

  • 1/2 Tbs paprika powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp cayenne pepper (optional)

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 1 tsp salt

  • 0.5 tsp black pepper

Ribs:

  • 1-1.5kg / 2-3lb pork ribs (1 rack)

  • 1/2 cup apple juice

  • 1/2 tbsp olive oil

Homemade Barbecue Sauce:

  • 1 cup apple cider vinegar

  • 1 1/2 cups tomato ketchup

  • 1 1/2 tbsp molasses, or honey

  • 1/3 cup dark brown sugar

  • 2 tsp mustard powder

  • 1 1/2 tsp garlic powder

  • 2 tsp Worcestershire sauce

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp Tabasco or cayenne pepper (optional)

To make the Barbecue Sauce:

  • Simmer all sauce ingredients in a saucepan over medium heat, stirring occasionally.

Instructions:

  • Combine the Rub ingredients and rub onto both sides of the ribs, focusing on the meaty side. Let it marinate for 20 minutes (or overnight).

  • Preheat the oven to 160°C/320°F.

  • Place the ribs on a tray in a single layer, pour apple cider underneath, cover with foil, and bake for 1 hour 30 minutes until the meat is tender.

  • Remove from the oven, increase the temperature to 180°C/350°F, drizzle with olive oil, and return the ribs to the oven for 15 minutes until the rub crusts.

  • Flip the ribs to have the bonier side up, slather with Barbecue Sauce, bake for 10 minutes.

  • Turn the ribs over with the meaty side up, slather with Barbecue Sauce, bake for 5 minutes. Repeat until a thick glaze forms.

  • Cut the ribs into portions and serve with remaining Barbecue Sauce!

Enjoy the process of creating and savoring these BBQ Pork Ribs!
